Inspired by childhood memories of grandma’s lovingly composed breakfasts back home in France, Chef Stephane Calvet has created an ideal accompaniment to the serene scenery – a delectable menu with the energy and inspiration to set you up for another amazing day in Chiang Mai.
Breakfast begins with freshly pressed tropical juices and rice milk for a richer flavour of nature. Meanwhile, the aroma of breads and buns emerging from the oven wafts your way. The selections themselves shortly follow – tartines, crispy long baguettes with grains and seeds. Then another ingredient from Chef’s memories – warm bee pollen baked into traditional Madeleine cake – arrives in style. Reach deeper into the idyll with a bowl of bircher muesli mixed with fresh green apple, fruit salad and lime gelee. Then make the most important meal complete with Chef's signature “Oeuf à la coque" soft-boiled eggs complete with crunchy brioche sticks to dip in the yolk.
