Welcome to The Nam Hai Cooking Academy, which showcases centuries of culinary history. With 35 homegrown ingredients and expertly trained Vietnamese chefs, you will experience the personification of Vietnam’s melting pot of traditional flavours and learn unique techniques.
Renowned for its intricately balanced flavours and textures, Vietnamese cuisine uses very little dairy or oil and allows fragrant herbs and local vegetables to take centre stage. Choose from single-day to week-long courses and discover this cuisine’s fascinating subtleties and nuances.
Daily culinary themes span the length of the country – from Hanoi’s haute cuisine to Hoi An’s street food, traditional imperial dishes to local favourites – with each day’s cooking supplemented by an excursion to a local place of culinary interest.
Whether you’re a hobby cook wanting to experiment or a kitchen professional keen to expand your repertoire, our mission is to impart serious culinary know-how and equip you with the skills required to produce exceptional Vietnamese cuisine.
Vietnamese food is all about fresh ingredients, and ours are about as fresh as they come – picked daily from our on-site herb and vegetable farm where a team of 10 full-time gardeners nurtures more than 35 seasonal varieties.
Every Cooking Academy day begins with an immersive activity that informs the day’s menu – from visiting the Tra Que vegetable village or the Phuoc Hai fishing village to making fresh rice noodles at a nearby paddy field.
JUNIOR COOKING ACADEMY
A flair for flavours can begin at any age. Our Junior Cooking Academy runs for an hour each day, teaching wannabe pros all the skills of rice paper rolling, cookie- and biscuit-making, chocolate-making and much more.
