Having worked in some of the most important kitchens of the local and international gastronomic scene, including the opportunity to collaborate with prestigious chefs in Mexico such as Michael Mina and Martha Ortiz, Tonatiuh’s incredible experience has led him to reconnect with the flavours and ingredients of Mexico’s Pacific coast, where he has his own roots. He has devoted himself to the creation of ZANAYA, not only by recreating the authentic flavours of the Nayarit region, but by also paying attention to the details, including the custom-built, wood-fired grill made specifically for cooking zarandeado fish the way it was traditionally done.
