Meet the Team
Ryo TakatsukaChef de Cuisine, Noe
Chef Takatsuka has been drawn to the kitchen ever since he was a young boy growing up in Toyama, a coastal city along the Sea of Japan. His passion for Italian cuisine propelled a bold move to Tuscany and straight into the kitchens of Pistoia and Siena. During his 10 years in Italy, he worked with Chef Giancarlo Perbellini in Verona, helping his restaurant to earn two Michelin stars before Chef Takatsuka moved to Tokyo in 2008 as Head Chef for the highly acclaimed Ristorante Yamazaki. In 2016, he arrived here at Noe, where his creative vision comes to life in the most unexpected ways.
“Never give up; you already know what is the most important for you.”
More Dining Options
Waterman Bar & Grill
This surf-style, casual poolside eatery pays homage to Hawaii’s legendary watermen with its vintage vibe and menu filled with the flavours of the North Shore. Stop for a light lunch between dips in our Family Pool or for refreshing sunset cocktails.
Whether it’s breakfast in bed, dinner for a hungry family, or a midnight craving for chocolate cake, we’ve got you covered, day or night. Need a little private time? Order a bottle of wine and enjoy the sunset from the comfort of your room’s balcony.
La Hiki Kitchen
Inspired by the Hawaiian phrase mai ka la hiki a ka la kau (“from sunrise to sunset”), La Hiki Kitchen offers island-to-table family-style cuisine with local produce and dishes that showcase the bounty of the island. Curing, smoking, ageing, preserving, pickling and slow cooking are the hallmarks of island cuisine, all centred one simple philosophy: "Cook as Mother Nature intended and as grandmothers Nola and Nay would have wanted."
This is the perfect place to start and end your day. When the sun comes up, this open-air gathering spot will draw you in for gourmet coffee and freshly squeezed juices; late afternoon, meanwhile, brings a special wine-by-glass menu, beer selections and pre-dinner drinks for sipping on the terrace as you overlook our beautiful beach.
Mina's Fish House
James Beard Award-winning Chef Michael Mina brings a line-to-table philosophy to our take on the traditional Hawaiian fish house, where friends and family gather for beachfront meals paired with local brews, tropical cocktails and panoramic ocean views.
